Simple Roster 4.1 update is out. This update has added 3 new colours for shifts and fixed a bug on Watch Glance for not displaying the correct next shift.
I have searched everywhere looking how to wireless transfer / airdrop from iPhone to iPad.
Can you break it down to simple instructions for me please?

Both iOS devices will need to have Simple Roster open and at the ‘Wireless Transfer’ page. Then from the device you want to transfer from, you should see the device you want to transfer to, tap on that and the transfer should begin.
After transfer finished, make sure you complete the rest of the steps on your receiving device. You’ll have to decide which profile you import the transferred roster on the device.
